take it to someone to check the mixture for you (xelinu does it well)

try replacing the sender and gauge with a known working good pair

if its the 850 there sould be a mixture test button on the carb, check this first, then if you really want it to run cooler al the time, drill some holes in the thermostat (i have done it with std turbo thermostats with engines running high boost they are usually fine till they blow the headgasket due to the boost)
do one thing at a time, if its getting hot already it will just take a bit longer to get hot with a header tank, did you have the head pressure checked??? it could be cracked although its not usual.

I'll start from the sender and the guage, I have been using a yazaki guage, I will now try to connect a smiths guage with a black sender (instead of the read sender which the yazaki uses)..

I think I will then check the water pump, I replaced it last february, but it could be that water is not circulating enough, because I'm sure the fan is doing it's job well and the radiator is not blocked!
