The design of the carbs is very similar to an SU with the dashpot and needle but they also have primary and (I think) secondary adjustable jets which means on part openings you can finely adjust mixtures which will give better running and improved fuel economy - as much as I like the sheer noise of a weber it gets to you after a while as does the fuel bill. Don't want to remember the number of times I filled up on the way down to the Riv run last year!
I got the carbs from one of the internet site which does part searches as it worked out cheaper than the devils own ebay and I could drive local to pick them up to check the condition which although not to clear in the photos they look as if they have done about 2000 miles, very very clean.
Carbs cost me £70 including all the rubber mounts to the engine and to the airbox and airbox included - you can pay silly money off ebay and they dont come with all the bits or as clean. You need to be sure what size of carbs you are getting as there are loads out there which are 34mm / 36mm not many at 40mm - apparently blackbird carbs are 42mm but try finding some for sensible money!

If the carbs were spaced then the manifolds would be easier to make but then thats offset by the extra work involved in spacing them
Yes inlets are steel
If you mean needles & jets etc then yes they are all available via internet
