CAR: 1995 Cooper SPI, no modifications

It’s been a while, I hope everyone is well. 😀
I am having an issue with my Coolant Temp Sender on my Cooper SPI,
Currently, the sensor’s connection is sporadic; going from normal, to disconnected (the default ECU value), to a completely random temp value (as high as 230°C) seemingly at random.
This last condition can make the car undrivable as the fuel ratio is affected.
I am having the sensor replaced in a few weeks, but in the meantime, what are people’s thoughts on disconnecting the sensor? Would this cause irreparable damage to the engine? I realise it is not ideal but perhaps the best of a bad situation until it is mended.
From what I have read, when the sensor is disconnected, the ECU defaults the value to 60 degrees and adjust the fuel ratio based on that. (please correct me if I am wrong 😀).
