Looks to me like the oil we can see here, is as sonikk suggest, it's run down the studs when stripped down. Even if it was rings and / or guides, that's a lot of oil for comping from them.

 

I'd say your problem here is it's still running quite rich, especially by the appearance of the piston crowns.

Decided to work on the assumption that T.Harper and Spider's instincts were right - i.e. that all the oil in the photos was the result of the strip down rather than being in the chambers originally, and that the wet plugs before I removed the head were the result of an incorrect carb setup. 

 

Long story short, they were right. Got it running today and there is no smoke in the exhaust. Thanks for your thoughts everyone - really appreciated you taking the time.
