Isnt there a big bolt in the centre? (Ive never done a mini clutch so could be wrong)

Yes, you have to remove the large center bolt and take the entire assembly out of the car to replace.
The flywheel is not connected to the crankshaft in any other way but through the pressure plate. The pressure plate has a very robust central hub that mounts onto the tapered portion of the crank, with the large bolt securing it. You will need to lock the motor (they sell a specific tool for that or you use an old crank bearing shell) using the starter teeth on the flywheel, first to undo the large bolt, and then to crank down on a flywheel puller remove the flywheel. Since the motor is new, you might not need to use that much force on the puller to get it to come off but they can sometimes fuse together and take A LOT of force to remove.

Hi, having problems disengaging clutch (verto) i have stripped all down housing and release mechanism to access clutch in situ. Without removing flywheel can I change the clutch. I have removed the 6 bolts holding the pressure plate to flywheel but it won't come free, am I missing some fasteners? Its a New clutch on a rebuilt engine gearbox but been standing 6 months whilst I completed body resto. Has it clued itself together, how do I free it?
Sorry but please buy a Haynes Workshop manual.
you will need to reassemble everything you have undone so you can undo the big bolt and then lock the flywheel in place while using a flywheel puller to remove the clutch assembly.

Youtube examples are all the same. I have a puller if I have too I will remove it, just can't see why I need to give myself another hernia

The clutch plate is behind the flywheel - how do you think it will come out without removing the flywheel?
if it could be done as you think, then Haynes would do it that way!

I have a haynes manual, it says remove the whole flywheel and clutch assembly as one, I have undone it once when it was off the car, needed a 10 foot breaker bar. Bit difficult with it in the car. I can't see why I can't separate the clutch leaving the flywheel in situ. There are 6 bolts on the outside, none on the engine side!
Youtube examples are all the same. I have a puller if I have too I will remove it, just can't see why I need to give myself another hernia
Because that is the only way you can remove it.

The flywheel is bolted to the pressure plate with the clutch plate between.
The tail of the crank it attached to the pressure plate
the clutch plate is sandwiched between the flywheel and the pressure plate and the clutch disc transfers drive to the spline on the primary gear.
SO for short the pressure plate you unbolted is attached to the crank by the large bolt in the middle and the interference fit of the taper on the tail of the crank so you need a puller to remove the pressure plate not the flywheel since the flywheel is bolted to the pressureplate .
Can also be done in the car, i changed my clutch with the engine in, just jacked the engine up with the steady's loose removed the wok jammed the flywheel via the starter hole removed the flywheel bolt and lock tab with the tail slot aligned correctly and pulled it with a 18" bar and a cheap puller. Nearly sent the flywheel clutch assembly through the wing but wasnt bad.
