It would also be worth asking a machine shop to check that the head is flat and if necessary skim it.

As an update, we have now done our prep and fitted the recommended head gasket.
we took him for a trip out today and it is as perfect with no issues.
I will retorque the head bolts tomorrow then drain the deionised water and replace with correct coolant mix.
fingers crossed we got it right this time.
