Matt Read here in Australia is highly recommended. He has done heaps of them and sell kits with good instructions. Worth looking in to.

He might not check private messages much. You might have more luck calling him, I know time difference is an issue but he is very knowledgeable with the k head conversions and minis.
Do a search on ausmini for k1100, there are a few guys that have done good build threads and matt has been involved with them too.

Whats the sort of cost people have spent without the actual engine unit so just head and the conversion

Are you going to blow an 8 valve or go for a full race cam 16 valve?

I was going to do all the work myself,  ( I'm now going down a different route ) but when I thought about it, it would have been much more sensible to have gone with Motorworks and  SpeedWorks race cams.
