I've heard of a few in Australia with big single Mikuni motorbike carbs

Same here but even longer ago!

Just for comparission I changed from a correctly dyno tuned weber DCOE45 to the above set up

Outcome was 1000 less rpm to get the same power output however the gains were in the power delivery and the vastly lower amount of fuel used compared with the Weber

Super cheap to purchase and also much cheaper to set-up.  The main jet is drilled in millimetres, so a 140 jet on a Mikuni  is 1.4mm, all you need is a cheap set of small metric drills and you can change you jetting, if it's too big you just solder it up and redrill it.

Exactly

Tuner had a set of jets, swapped out until correct one found then mine adjusted to suit, and he kept his "set". There was something about blocking some air jets also but cant remember what exactly

Well, yes and no. A jet is more than just a hole. Any imperfections after drilling on the entry or exit can affect flow more than you think.

I've had a pair 38mm flat side, semi-downdraught Mikunis off a TRX850 on the shelf for a while.  I've been mulling over fitting them.  must get round to it.
