So I've got some old 10x6 cosmic slotted mag wheels with 30yr old dry rotted tires on them. Anyone got any tips on how to get them off? Even just breaking the bead is hard.

Take them to a tyre specialist. They have the tools & expertise.

Even if the tires are old and look to be falling apart, remove the valve core or cut the old valve stems off the rim with a razor knife.  That will allow air out when you attempt to break the bead off the rim.

Pros have tools that make breaking the bead easy.  For a DIY person, you will need to find something available to you that will allow you to use a long lever arm to push the sidewall down to unseat the bead.  You are going to have to get creative.  Once the bead is unseated, lacking a tire machine you will need to cut the tire bead with something like a cutoff wheel so you can get the first bead off the rim.  The second bead you will be able to muscle over the edge.

As mentioned above, a pro can do this for you for little money and for a little more they will probably agree to dispose of the old rubber for you.

On a mini with 165 tyres I use a bench vise to break the bead

The difficulty comes in breaking the bead and removing the tyre (or its remains) without damaging the rims. Tyre specialists are good at that, and if they f it up, at least yoy can claim on them.

Editd for spelling :-(

I ended up taking mine to the local tyre place because it was so difficult to get one tyre off let alone the 4, and worked out cheaper as we have to pay to dispose of them in the uk. Be careful using a grinder and cutting disc in the rubber, it can easily get locked up and fly out your hands.
