When driving anywhere between 40/60 mph and I release the accelerator I'm getting, what I can only describe as a ringing bell noise, but disappears as soon as I accelerate again.
Any ideas?

loose exhaust clamp? Perhaps you could help a little more and say where abouts on the car you think its coming from?

87 mini city. Doesn't happen all the time, comes from the engine bay. Can't tell a specific point as it only happens when I'm driving

Have a look under the car and tap everything and see what vibrates, or makes a noise. Same for in the engine bay, this will help you locate the noise.
Or just a visual check of connections, cables ect.
