get really thin aluminium or stainless steel disks as they cut thinner, which makes it cut quicker and therefore, a pack of disks lasts a bit longer

NO.
DO NOT use a grinder this way, you must push the blade into the material you are cutting rather than cut with the blade rotation. Same with a router, circular saw or any cutting tool. It is very, very dangerous to cut with the rotation of the blade. For one thing the grinder can pull out of your hands and propel itself away from you. If you are doing it right and not forcing it then it will produce a good quality cut, without maiming anyone.

Cheers for the advice Dan - just done my whole car this way - OOPS (lots of grinding to do on my camper though so cheers)
