how do i measure stroke without taking the head off
and what would the stroke be for the 848 and the 998?

I guess you could technically try and compare stroke between a 850 and a 998 by putting something through the spark plug hole, but the figures would obviously not be specific, so you would have to have a 998 and a 850 and you would be able to tell the difference, but not just have an engine in front of you and say "thats <insert capacity>"

My pick-up's 850 prefix is '85H'. Also, if its had a conversion to a later A+ engine (which is doubtful on a Hornet but possible all the same), and the engine number looks genuine (ie a small plate about 2 inches by 1/2 inch on the top right front of block just under the temperature sender unit), then see if it has an 'E' in the number, ie '99HE' or '12HE'. If it has then chances are its a post 89 block and you can run it on unleaded without modification or additive!

(obviously the head needs to relate to the block, which can be hard to tell, but nevertheless keep your eye out for it). The plate is usually riveted on with two small dome head rivets too.
