You should be able to use a standard roof for the infill too

Not quite. Going to use a fibreglass skin and extend that. Otherwise I would need probably two metal skins.
 

That's weird....
Mine is a 6" drop and I used the original roof for the outer sections and another for the infill panels round the sides and front and the remaining 'inner' complete section for the main roof. My chop's roof is about 3-4" wider and around 6" longer, but I managed to do it from 1 carefully cut infill section.

Yeah I know what you mean. But I have already cut the roof up to about 3'' all the way round. I probably could of done it with just one more if I left more metal on the original roof.

That would explain it then, I left around 8" all the way around
