I would get the engine and subframes out first.
Brace it up internally then get it on a spit. That will make your life so much easier.

to tackle the large amount of surface rust ( & to save money) was searching around on ways of doing it myself and i found this , obviously bit more complicated but its too late to type full thing out ...
Basically use steel wool first and rub the whole car down ...
then apply vinegar water & leave for 10 mins
wash off by hand & dry by hand
then spray with an Anti-rust primer..
Any thoughts ?

Regarding the surface rusting. Vinegar does apparantly work although I've not tried it myself as I think it will take too long. It seems several days soaking, suitable for small parts only I'd say. You could try citric acid and wallpaper paste covered with clingfilm (24hours)
If the surface rust is very light phosphoric acid would work, something like rustbusters phosclean B. I prefer to use rust removers rather than rust convertors.
Take a look at my build thread if your interested in rust. I had some heavy rust under the drip rails on my mkII and have some after treatment pics, also did some research on different paint.

Look's like a good project, What year is it? Is it a genuine GT?
For your pictures I would create a photobucket account and copy the IMG code in to your posts.
