Yeah I looked at the inline thermostats but I wasn't very keen on the fact they just seemed to float about in the engine bay - so I spoke to Mocal and they had the sandwich plate 'stat, which seemed to be a better option for me. You can see the extent of subframe surgery in this pic, about a 4" long section has been removed, it shouldn't compromise the integrity of the frame, and it makes the oil filter accessible when oil changes etc occur.

You were right Dan, the gauge doesn't need stabilisation, simple live in and feed to the sender.

And here's a pic of the chav mesh, I don't think it looks too bad....

just to wrap this one up, got the oil cooler fitted and pipework on:

The 'stat works well, opening at around 87 degrees oil temperature. The gauge seems accurate, and I'd recommend this fitment to anyone, aside from the need to slightly modify the subframe its a piece of cake to fit.
