This has'nt been mentioned so I can only conclude that- as seems to often be the case!- I have a situation that no one else does.On one of mine that I renewed if it is set to just no play it shuts off the flow of grease so the gun cant overcome it. Adding more shims so that it can be greased takes it to a point where the MOT man wont accept it.What's going on?

You might have one of those dodgy new joints that is missing the channel for the grease to go up the joint. This type of ball joint will suffer failure prematurely. This has'nt been mentioned so I can only conclude that- as seems to often be the case!- I have a situation that no one else does.On one of mine that I renewed if it is set to just no play it shuts off the flow of grease so the gun cant overcome it. Yes, with the lapping process, just do it very lightly. Its all about getting the balljoint to be withing a tolerance when the joint is assmebled with the shims. After lapping, you may find it slightly tighter in some orientations, but should bed in OK. Its when there is a larger difference you whould consider lapping.
But i have done it in every case on my mini, just a very slow speed and gently did the trick. As mentioned, ensure all paste is removed before assembly.
