The Mini has a harsh ride at the moment, i like it but my girlfriend that uses the car dailey is saying its to much to the point i may have to sell it.

how do you adjust these to soft?

difficult job?

A lot of people who have fitted SPAX or similar adjustable dampers find that for normal driving they are a bit too hard.
the Mini suspension is short-travel, so it needs to be able to work and to allow suspension travel on normal roads.
If you look at the base of each damper there is a small screw. turn this all the way anti-clockwise. then turnnit clockwise until you just feel a small click. That is 'one click' of hardnerss setting. if the dampers are in good condition, try 4 or 5 clicks on the front and 3 or 4 on the back to see which suits best. if thye dampers are a bit older, they may need an extra click or two.
For track use, more clicks are necessary as a track is very smooth. If damping is too had on the road, the tyres fail to keep proper contact and the car will 'patter' across the road when in a bumpy corner.

why 4 or 5 and 3 or 5?

why not 1 may i ask?

yeah its way to harsh for her at the moment, so next bet will be just going for some pattern parts?

I usually start at 4 front and 3 rear with gas SPAX, then drive it and see how it feels .If it's too soft, I click it up one click at a time. If too hard I click it back a bit. It seems that the front needs to be a bit harder than the back, but in the end it's up to you to set what suits your driving style and the use to which the car is put.
Just experiment a bit.

the set up i with with my spax is the other way around

i run mine firmer at the rear and softer at the front

That must improve the 'turn-in' on those lovely narrow and twisty Cornish roads! I was down your way recently, not in a mini I must add, and those roads are fantastic. Fowey is a beautiful place as well.

Are you sure the rubber cones haven't collapsed - with age they go 'rock' hard. Or has the suspension been lowered so it's (almost) sitting on the bump stops?? I suspect that's the problem rather than messing about adjusting dampers......
