Hi
I have plugged a few sealant leaks recently, and I'm not sure whether this is connected but the engine now seems much louder and 'raspy'.
To go into a bit more detail, when accelerating the engine now sounds considerably louder from within the car, and the sound I can only describe as being raspy, almost like a motorbike engine. It's there when I'm accelerating through the gears and is still there when approaching the top end of 4th. Previously it was more of a gentler hum as opposed to a rasp.
At rest, when ticking over, this noise isn't there, and it hasn't affected the performance of the car at all.

Model is an 84 Mayfair with a 91 997cc manual engine

Could be helpfull if we knew what exactely you replaced before the noise occured? 
Is it loud only on full throttle? Or is it also present at half throttle & deccelerating (engine braking)? A compression test or pressure drop test would help to exclude a possibly burned head gasket or valve.
Also check if the joint manifold/exhaust down pipe is tight and doesn't blow. You can feel it with your hand (swiftly!), but don't touch the exhaust. Best to test it when the engine's still cold. Might be as easy as a blowing exhaust. If you still have the original cast manifold & downpipe.

Replaced two seals that were leaking oil on the gearbox and engine - pretty basic stuff.
Easiest way to describe it is that it is making the noise when the accelerator is depressed, the harder you press it the louder it gets. It doesn't sound like a blown exhaust IMO but will check.

Its likely that there is a small gap between the carb and air filter, check that its seated properly. If it is then check that the carb is secured properly to the inlet manifold and that is secured properly to the head.
