Are Italian Job Minis Carb Or Injection?

Were they all carb or did they mix with injection?

The one i went to view was a K-reg carb. I believe all of the later special editions were based on the city model of that particular age, thus only Coopers were injected around 1993.
Some parts, ie the petrol tank may have been SPi spec, but this was just to prepare the range for the full move to injection.

As Ryan says, they were based on the City, or Sprite, base model. These had the HIF38 carb on the lower power engine (smaller inlet valves and lower CR).

How does that compare to the 1275 fitted to the 80's metros. not the MG but the HLs etc?

I believe the 'standard' 1275 (90 onwards) Mini engine is basically the same spec as the standard Metro. The Rover Cooper was basically the same spec as the VDP and MG Metros. However, I think all 1275 Metros used the HIF44 carb, whereas the standard Mini used the HIF38.
