between the sender and the tank would be my logic.

as above, between the sender and the tank! that's where you need it as it creates a seal that stops the fuel from getting out

Cool thanks, do I need to use any gasket sealant on the rubber seal? Or will it be alright without?

No sealant will be needed if the surfaces are clean and the gasket is new. If you are re-using an old gasket that is hard and cracked, a thin coat of non-hardening, fuel resistant gasket sealant will help prevent leaks. Under NO circumstances should you use RTV silicone sealants on any fuel related parts.
