I'm just going to bury my head in the sand a pretend the IVA test doesn't apply to me
like i said the battery trays on the camper are non structural my current ones are made from plywood

With regards to the Galvanic corrosion or dissimilar metal corrosion there are ways around this but because you have to weld the items together then this is not feasible.
If you were to bolt the items together or rivet (solid rivets ie Monel or Hi Loks etc) then a suitable barrier between the mating surfaces is required. For aviation purposes for example at least one of the surfaces (call it the mild steel side) will need a protective finish on it normally etch primer and a top coat for best protection. The stainless side could also be etched and painted as well but between the two surfaces you would use an interfay layer. This is basically a sealant whose chemical properties prevent Galvanic or dissimilar metal corrosion from starting.
So for a car on a budget its not really a proposition although for non structural areas then there would be nothing to stop you from using stainless.

nah Bungle ,
surely you must have realised it'd make your car need an IVA, as the structural areas wouldn't be to the standard factory specifaction! LOL

Who wants to be the 1st to phone BMH and ask for a price on a complete set of panels in stainless then?
