I am doing some work on a hydrolastic car next week.

I have access to all the proper kit, I need to top up and re pressurise the system.

Is there a guide on how to do this?

The how to will depend on what kit your using to undertake the work. My old Churchill kit has a procedure to evacuate a create a vacuum in the system before you recharge it with fluid.
The heights and pressures are in the workshop Manual.
