One way is to release the clip on the cylinder so you can turn it while holding the pipe union still. Then work back along the line in a similar fashion. However, if you're replacing the pipe anyway just cut it. Have some method for stemming the leaking fluid ready.
It depends where you're disconnecting as to what will work best. I have a collection of unions with crimped over ends of pipe to screw in; opening the bleed nipple* and holding the pedal down will also isolate the reservoir to stop it draining right the way through.
* doing that first avoids pressurised squirting.

The hoses have hex body fittings on their ends, the nuts are on the hard pipes. Use flare nut wrenches (one on the pipe, one on the hose) so you can prevent the hose from rotating/twisting while you loosen or tighten the nuts.
As for removing the old hose, you only need to be careful with the main pipe from the front of the car since you are talking about replacing the rear hard pipes and hoses. To minimize fluid loss, remove the cap from the master cylinder, stretch some plastic film over the reservoir opening and re-fit the cap. Don't forget to remove the film and bleed the brakes carefully once the new pipes and hoses are installed.
